My Hubby's Zone - Mexican Kothu Tortilla



I thought I was crazy. Here is what my husband did for dinner while he was in the states. He and his colleagues wanted to eat something hot and spicy, and something that would look and taste different. So here is what my hubby came up with.

Mexican Kothu Tortilla:
Ingredients:
10 tortillas
1 big fat onion  (cut into thin stripes)
2 tomatoes
4 cloves of garlic (cut into tiny peices)
1/2 teaspoon of ginger paste
1/4 spoon of tamarind paste
2 tablespoon of kitchen king masala
1/2 teaspoon of black pepper powder
1/4 tea spoon of red chilli powder
Pinch of turmeric powder
Salt to taste
Vegetable Oil- 3 to 5 tablespoon

Tastener:
Scrambled Egg (4)
Chicken Nuggets (10 nuggets cut into small cubes)

Method:
Roast the tortillas one after the other in a tawa till they are crispy. Keep them aside. Now take little oil in a big Degchi and toss the stripped onion in it till they are golden brown.Then add chopped tomatoes and let it cook for one minute. Now add, the garlc-ginger paste, tamarind paste, kitchen king masala, pepper, chilli and turmeric powder into the fried mix and let it cook for about a minute. 

Once does add little more oil into the mix, add scrambled egg and/or diced and cocked chicken nuggets into the mix, add the required amount of salt and mix well. Now break the crispy tortillas into small peices and add it to the earlier mix and let it cook for about 1 min in low flame. 

Now with a spatula beat up the whole mix for about 1 minute and serve hot.

    Theb best one i ever had was the local indian version called kothu porotta from the streets of madurai.......
